Peach Parfait and Peach Yogurt Muffin Recipes--with Low-Fat Options
Ingredients
One 3 ounce package cream cheese (or light cream cheese)
1-cup plain yogurt (non-fat preferred)
1/4 cup sugar or Splenda (you can mix sugar and Splenda 50:50 if you like)
6-8 medium peaches, pit and slice (about 3 to 4 cups)
2 tablespoons chopped almondsDirections
Over the sliced peaches, sprinkle with ½ cup sugar/Splenda and refrigerate for about an hour. Beat together the cream cheese, yogurt and 1/4 cup of sugar/Splenda until smooth. Spoon alternating layers of cream cheese and yogurt mixture with the peaches into parfait glasses. Top with almonds. Serves 6 – yeah, if you are lucky!
You can substitute canned or frozen peaches if fresh peaches are not available, but remember that canned peaches are already sweetened so the amount of sweetener in the recipe would have to be reduced. When you use canned peaches, make sure they are completely drained of excess juice before you use them.
