Ingredients
Olive oil cooking spray
2 teaspoons olive oil
2 1/2 cups sliced mushrooms
1/4 cup chopped red bell pepper
1/2 cup grape tomatoes, cut lengthwise in half
1/3 cup chopped green onion
3 English muffins, cubed (3/4-inch)
1/2 cup shredded Swiss cheese
4 egg whites
2 eggs
1 1/4 cups 1% low-fat milk
1/2 teaspoon herbes de Provence or Italian seasoning
1/4 teaspoon dry mustard
1/8 teaspoon salt
1/8 teaspoon ground black pepperDirections
Don’t forget to start early, as this dish has to rest at least 4 hours before baking.
1. Lightly coat an 8 x 8 x 2-inch baking dish with cooking spray and set aside.
2. In a large nonstick skillet, heat the oil over medium-high
heat. Add the mushrooms and bell pepper. Cook, stirring, for 1 minute. Add tomatoes and onions. Cook for 2 to 3 minutes or until vegetables are tender, stirring often. Remove from heat. Add bread and toss until combined.
3. Place half of the bread mixture in prepared baking dish. Sprinkle with half of the cheese. Top with remaining bread mixture and cheese.
4. Lightly beat the egg whites and eggs in a medium bowl. Stir in milk and herbes de Provence, dry mustard, salt and pepper. Pour egg mixture evenly over bread mixture in baking dish, pressing down slightly with the back of a spoon to moisten the bread. Cover and refrigerate for 4 to 12 hours.
5. Preheat oven to 325°F. Bake, uncovered, for 50 to 55 minutes until browned and puffy. Let stand for 10 minutes before serving.
