Almond Oatmeal with Cherry Sauce

Ingredients
2 cups 1% low-fat milk
1/2 teaspoon almond extract
1 cup old-fashioned oatmeal
1/4 cup apple juice
1 teaspoon cornstarch
12 cherries (fresh or frozen), pitted and chopped
1/8 teaspoon grated orange rind (optional)
Salt to taste (optional)
Artificial sweetener to tasteDirections
If you don’t eat dairy products, you can substitute almond milk for the milk and almond extract.
1. In a 1 1/2-quart saucepan, combine the milk and almond extract. Stir in the oatmeal and bring to a boil over medium-high heat, stirring frequently. Reduce heat and simmer, uncovered, 10 minutes or until desired creaminess, stirring occasionally.
2. While the oats are cooking, in a medium microwave-safe bowl, stir together the apple juice and cornstarch. Stir in the cherries. Microwave on high 1 to 2 minutes, stirring once, or until mixture comes to a boil and liquid becomes transparent. Stir in the orange rind.
3. Season the cereal with salt and/or artificial sweetener, if
desired. Spoon into two bowls and top each with half of the cherry sauce.
