Yogurt and Tropical Fruit Parfait

Per serving: Calories: 226 Carbohydrates: 31 g Total Fat: 8 g Saturated Fat: 6 g Cholesterol: 10 mg Protein: 10 g Fiber: 2 g Sodium: 155 mg Carb Choices: 2
Ingredients
1 tablespoon sweetened shredded coconut
1/2 cup finely diced mango
1/3 cup diced banana
2 teaspoons orange juice
2 (6-ounce) containers low-fat plain yogurtDirections
If ripe mangoes are not in season, you can use juice-packed pineapple or peaches instead. Instead of plain yogurt, you could also choose artificially sweetened flavored yogurt.
1. On a piece of aluminum foil, toast the coconut for 10 to 15 minutes in a 350°F oven, stirring once or twice.
2. In a medium bowl, toss the mango, banana and orange juice together.
3. Spoon 3 tablespoons of yogurt into the bottom of two 10-ounce glasses. Top with 2 rounded tablespoons of the mango mixture. Top with 2 more tablespoons of yogurt, then 2 more tablespoons of the mango mixture. Top each with half of the remaining yogurt. Sprinkle half of the toasted coconut on top of each parfait.

Any substitute for the coconut? I don't like it. How do you open a mango? I've tried but it's difficult for me. Thanks, Edna

Hi Edna,
Mangoes are a little tricky. Try this... cut 4 lengthwise slices into the mango. Peel the skin back one section at a time. Then after the skin is peeled back, pull the individual slices away from the seed.
If all else fails, check your produce department at your local grocery. They may offer fresh cut mango slices.
As for the coconut, you can just leave it out if you don't care for it.
