BBQ Chicken Salad

Ingredients

* 2 boneless, skinless chicken breasts
* bottle of your favorite low cal BBQ sauce
* head of iceberg/romaine, or your favorite lettuce
* 1 whole tomato
* 1 can black beans, drained
* 1 can whole kernel corn, drained
* cilantro, chopped
* scallions, chopped
* 1 seeded cucumber, chopped
* 2 tbsp. of your favorite low fat ranch dressing

Directions

Grill or Bake (at 350 degrees for 30 mins.) chicken breasts, basting with the low cal BBQ sauce. Slice or chop chicken into small pieces.Place to the side.
Chop the lettuce and place in a large bowl. Add chopped tomatoes, drained black beans, drained corn, chopped cilantro, scallions, cucumber and chicken. Dress with 2 tbsp. of low fat Ranch dressing.

*Note: add the dressing to your bowl, not the serving bowl and leftovers will keep well for a couple of days.
