20 Minute Chicken Quesadillas
Ingredients
8 6-inch flour tortillas
1/ 2 cup salsa (fresh, chunky is preferred)
2 tablespoons light salad dressing (or mayonnaise)
1/ 2 teaspoon chili powder
3 boneless chicken breasts halves, skinless and sliced
1 cup Mexican-style shredded cheese (sometimes called four-cheese)Directions
Combine the salad dressing, salsa and chili powder together and then cover half the tortilla with the mixture. On top of that, place slices of chicken and the cheese mixture. Then, fold the other half of the tortilla over to cover.
Using a cooking spray on the frying pan, place the folded and stuffed tortillas, one at a time, into the pan and heat over medium heat until the sides are golden brown. Make sure the cheese is melted. It should take only about four or five minutes.
Cut each into thirds which will yield 24 triangular wedges. Serve with extra salsa. Guacamole and/or sour cream also make good toppings, but adds a level of fatty foods to an otherwise lean lunch.
