Chicken and Strawberry Salad
Ingredients
* 1/2 pound skinless, boneless chicken breast, either broiled or grilled
* 1/4 cup slivered toasted almonds or piñon pine nuts or shelled sunflower seeds
* 2 cups strawberries, sliced
* 2 ounces crumbled feta cheese or Parmesan cheese
* Fill a two-quart mixing bowl with your blend of lettuce, arugula or spinach
* Strawberry vinaigrette dressing or, if you prefer, an oil and vinegar dressingDirections
Mix the greens with 1/4 cup of vinaigrette dressing, tossing to distribute. Divide to two plates and dress with the remaining ingredients on top of the greens, or mix entirely together and distribute to two portions.
