Blue Cheese Souffle

Ingredients

2 T grated parmesan cheese
4 large eggs, separated
1/4 tsp kosher salt
1/4 tsp black pepper
dash hot sauce
3 T whole grain cornmeal

Directions

Preheat oven to 400 degrees F.

Grease a glass loaf pan or small casserole dish and sprinkle with parmesan to coat the sides.

In a large bowl, thoroughly combine the egg yolks, salt, pepper, hot sauce, cornmeal, and blue cheese sauce. Set aside.

In another large bowl, beat the egg whites until they can hold stiff peaks.

Stir about 1/4 of the egg whites into the yolk mixture until smooth to lighten the yolk mixture.

Very gently fold in the remaining egg whites, trying to create a fairly uniform mixture without deflating much of the volume.

Pour the mixture into the prepared pan, and bake at 400 degrees F for 17-20 minutes or till puffed up, golden brown, and set.

Serve with a light side salad for lunch or dinner.
