Avocado and Corn "Salad"
Ingredients
2 Avocados (soft if you can find them)
1 can of corn (not creamy corn)
Chopped Green Onions (amount per taste. You can actually leave these out completely if you'd like. I LOVE the flavor it adds but my mom hates it so I usually have to make 2 batches)
Olive Oil
PepperDirections
After removing skin and pit of avocados cut them up and mash them a bit.
Drain all liquid from corn
Chop green onions to desired size
Mix all ingrediants together. Your avocados will get a little bit more mashed - this is good!
Add olive oil and pepper to taste. You don't want it to be saturated in olive oil - just enought to get the ingrediants to stick (probably about 1-2 teaspoons)
Enjoy! It's a great side dish to any meal ( I especially love to pair it with Black Bean Burgers. This receipe has also been added in the vegetarian section)
