Bean and Corn Salad

Around 288 calories per 1/2 cup
Ingredients
- 1 can of black beans
- 1 can of garbanzo beans
- 1 can of low-sodium corn, unsweetened
- 1 can of Rotel with or without green chiles
- a handful of diced onion (I use vidalia)
- 1 tablespoonful of minced garlic
- a pinch of sea salt
Optional: add a little fresh cilantro and/or cumin (tastes great without it)
If you like spice add some diced jalapeno (no seeds!)Directions
Rinse canned beans and corn and put them in a bowl. Stir in Rotel, garlic and sea salt and let the mixture set overnight in the fridge (I typically just eat it right away, I'm impatient, but the garlic flavors are more apparent if it sits overnight).
You can eat this salad with lightly-salted tortilla chips. I usually pair it with tilapia or ahi tuna steaks.
