Sweet-Onion-Roasted Hot Wings
Nutrition Facts
Exchanges per serving: 4 med-fat meat; 1/2 nonstarchy vegetable
Ingredients
2 large vidalia or other sweet yellow onoins, very thinly sliced
1 tsp butter
1 tsp kosher salt
1/2 tsp coarse black pepper
3/4 cup hot sauce (such as Louisiana or Tabasco), divided
2.5 lbs cleaned chicken wingsDirections
Add onions, butter, salt and pepper to a nonstick skillet, cover, and cook over med-high heat for 10 minutes.
Stir in 1/4 cup hot sauce, cover, and cook 10 more minutes.
Stir in another 1/4 cup hot sauce, cover, and cook 10 more minutes.
Stir in the last 1/4 cup hot sauce, reduce heat to medium, cover, and cook 20 minutes.
Remove from heat, uncover, and let cool.
Transfer mixture to a blender or food processor and process till completely smooth.
Place chicken wings in a gallon-sized zip-top bag inside a large bowl. Pour sauce over wings, coating completely, and refrigerate overnight.
Remove wings from fridge. Preheat oven to 300 degrees F.
Pour wings and sauce into a roasting pan, distributing in an even layer. Cover with aluminum foil and roast at 300 for 1 hour.
Remove pan from oven. Increase heat to 450. Remove foil from pan, and toss wings in sauce to evenly recoat. Cook, uncovered, at 450 for 20 minutes.
Serve!
