Potato Soup
Nutrition Facts
125 calories per cup
Ingredients
4 (8 ounce) cans fat free chicken broth
3 lbs potatoes, diced
1/2 onion, diced
4 T Hormel Real Bacon bits
8 ounces Velveeta reduced fat cheese product
1/4 cup fat free sour cream
2 tablespoons flour
3 tablespoons water
2 t reduced fat cheddar cheese
(For spicy soup, add 1 can of drained Rotel)Directions
Combine broth and potatoes. Cover and cook about 20 minutes, until potatoes are cooked through.
As potatoes are cooking, saute onions then add to cooking potatoes.
When the potatoes are soft, stir in cheese and sour cream, and simmer until the cheese is melted. Add bacon bits.
Mix flour and water and use to thicken mix.
Top with reduced fat cheddar cheese.
