Black Bean Burger
Ingredients
2 cans of black beans
Whole wheat buns
1 cup whole wheat bread crumbs
1 egg
2 Jalapenos
1/2 cup Green Onions
1/2 a Green Pepper
teaspoon Garlic
Olive OilDirections
In a food processor slowing feed black beans into it. The black beans need to be in a mixture of pureed ones, and larger chunks so they hold better.
As you're processing the black beans, get a small amount of olive oil in a pan heated on medium. Once olive oil is heated add chopped Jalapenos, Green Onions, Green Pepper, and Garlic. Satee until golden brown.
Toast buns either on another pan via stovetop or in a toaster. (best if toasted for a little bit of crunch)
Put sateed veggies into the food processor. Add Egg and Bread Crumbs. Mixed ingrediants together.
Roll mixture into patties and put on a skillet on low heat with a small amount of olive oil so they don't stick. Keep patty on each side for about 5-10 minutes depending on where you're temperature is at. It's better to keep stove on a lower setting so you can cook the burger longer without it burning.
I like to add a low-fat mozzarella cheese and a dab of ketchup.
Put on bun and enjoy!!
(Tip - I like to make a little extra to save for later. You can store in your fridge and when you're ready to eat all you have to do is roll and cook!)
