Chicken Enchiladas
Ingredients
6 corn tortillas
2 1/4 cups shredded cooked chicken (skinless, white meat)
3/4 cup black beans
3/4 cup sweet corn
1 1/2 cup medium or hot salsa
1 1/2 cup plain low-fat yogurt
3/4 cup reduced-fat sour cream
3/4 cup reduced fat shredded Jack cheeseDirections
Preheat oven to 350o F. Using an 8 x 8 inch baking disk, coat it with a nonstick cooking spray. Warm the tortillas in a pan according to tortillas. In a frying pan, it usually only takes about 15 seconds per side. Combine the black beans, sweet corn and shredded chicken. Mix the salsa, sour cream and yogurt and spoon about half the mixture with the chicken corn and beans. Be sure to mix it well. Divide the mixture with the chicken among the tortillas. Roll tortillas carefully and place them with the seam down in the baking dish. Spread the remaining salsa mix over the tortillas. Sprinkle cheese on top, cover with foil, and bake for 30 minutes. Each serving will only contain about 370 calories and only 76 of them come from fat.
