Chicken Waldorf Salad

Ingredients

1 pound boneless, skinless chicken breast halves
1 teaspoon olive oil
2 Granny Smith apples
1 tablespoon extra virgin olive oil
3 large stalks celery
3/4 cup red seedless grapes
1/4 cup dried cranberries (loosely packed)
1 cup roughly chopped walnuts

Dressing:
1/2 cup fat-free plain yogurt
1 tablespoon agave syrup or honey
1/4 teaspoon coarse kosher salt
1/4 teaspoon pepper

Directions

Sauté the chicken breasts in a sauté pan in olive oil for approximately 7 minutes on each side. Cool and cut into bite-sized cubes.

Add the extra virgin olive oil to the bottom of a large bowl. Cut the apples into quarters, removing the core from each wedge, then cut the wedges into bite-size cubes. Toss the cubes into the olive oil to coat them to prevent browning.

Chop the celery diagonally into 1/4-inch slices and add it to the apples. Next, add the chicken, grapes, cranberries and walnuts.

In a small bowl, whisk together the dressing ingredients. Pour the dressing over the chicken mixture, and toss together
