Crunchy Avocado Veggie Dip for Veggies

Ingredients

3 ripe smooth, dark-skinned avocadoes (Hass variety)

2 garlic clove, pressed

6 tablespoons lime juice (juice of two limes)

1/2 cups sweet onion, finely chopped

1 cups cucumber, chopped

1 cup tomatoes, seeds removed, chopped

1 teaspoon salt (or to taste)

2 fresh red chili pepper, seeds removed and finely chopped OR 1/2 teaspoon cayenne powder (optional)

Directions

Chop the cucumber, tomato, onion and chili pepper. Cut avocados in half, removing the pit, scoop out the fruit and place in a large bowl. Mash the avocado with a fork or potato masher and add pressed garlic and lime juice. Stir together lightly. Add the chopped vegetables, stirring again. Taste and add salt or salt substitute to taste. Serve with carrot, celery sticks, red pepper strips or baked corn chips.

I think this would be wonderful served over a bed of lettuce as well...and for a summer salad it would be very refreshing.
