Romaine and Spinach with Sundried Tomatoes and Goat Cheese

Ingredients
Dressing:
1/2 cup extra virgin olive oil
2 tablespoons lemon juice
2 cloves garlic, crushed with 1/4 teaspoon salt
1 tablespoon light mayonnaise
Salad:
1 medium-sized head romaine lettuce, washed, dried and torn into bite-sized pieces
2 cups baby spinach
1/4 cup slivered or julienned sundried tomatoes, packed in oil, drained
8 large mushrooms (such as button or crimini), trimmed and thickly sliced
1/2 teaspoon freshly ground black pepper
1/2 cup soft goat cheese, crumbled into chunks and set aside on a plateDirections
Combine all dressing ingredients thoroughly in a blender until smooth, then set aside.
Combine lettuce, spinach, sundried tomatoes and mushrooms in a bowl. Sprinkle with a bit of pepper, and gently toss with half of the prepared dressing.
Divide the salad onto plates and top with equal amounts of goat cheese, then spoon the remaining dressing on each salad.
