Scrambled egg fake out
Eggs are an excellent source of protein and choline (which aids brain function), and they also contain bio-available lutein and zeaxanthin (which are important for eye health). All this nutrition comes in a lovely, 70-calorie package with many more nutrients and less than 0.5 grams of carbohydrates.
While the yolks contain most of the choline and all of the vitamins D, A, E, and B6, many people wish to avoid them for their share of saturated fat and cholesterol.
If this describes you, there is a great way to ditch the yolks but keep that gorgeous golden color.
Simply mix in a little turmeric (known for its anti-infammatory, digestion-aiding, and potentially cancer-fighting properties) with your egg whites, and fake out your friends with yellow omelettes and scrambles that scream of the real thing.
